Be Nice To Your Brain:  Ponder the Power of Community.  Thank you all for your encouragement and prayers for me in the past weeks!  The final  exam is successfully over and you all made the difference for me.  The calmness that I felt is beyond description.  It was an online proctored exam and all of my movements were recorded with all hand and eye movements monitored.  You know how that goes — your nose starts itching when you’re not supposed to scratch it!   As I was counting my blessings and naming you each one by one, a key common denominator occurred to me.  You are all people who serve others in a multitude of capacities.  You are servant leaders and value pouring your lives into helping to make this world a better place for everyone.  You get outside your comfort zones, give of your time and money, and live your lives intentionally with purpose.  You are impacting humanity more than you could ever know.  I am the recipient of your kindness.  Thank you.

Spiced Sweet Potato Cauliflower Mash (According to Elle)

You will need:

  • 3 pounds California Sweet Potatoes, peeled and chopped into 1” chunks (about 3 large)
  • 1 1/2 pounds Cauliflower florets (from 1 large head)
  • 1/4 cup milk
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 2 tablespoons brown sugar
  • 1 1/4 teaspoons kosher salt
  • Fresh chives, chopped (optional)

Here’s the drill:

  1. Fill a large pot with 1-2 inches of water. Using a steam basket or large colander, steam potato and cauliflower until very soft, about 15 to 20 minutes, tossing occasionally.
  2. Transfer vegetables to a large bowl, or stand mixer if you have one. Add remaining ingredients: milk, Greek yogurt, cinnamon, allspice, nutmeg, brown sugar and salt.
  3. Blend everything together using a hand (or stand) mixer until desired consistency is reached. If the mash is too thick, add more milk as needed.
  4. Garnish with chives, additional cinnamon and/or brown sugar if desired.
